The false pepper tree is a large tree with a drooping habit that can measure up to 15 meters and whose long clusters of fruit give the pink berry.

It is harvested in two periods, from December to January then from June to July, when the bunches take on a bright pink or red color, then it is dried and carefully sorted.

Its strong taste goes easily with desserts (fruit salads, chocolate mousses), as well as with fish and shellfish, white meats or foie gras, provided however that it is used sparingly.
