Origin: Madagascar

Cloves, the main product of the clove tree, grow on the east coast of Madagascar, near Tamatave.

It is the flower bud which is harvested by hand then dried in the sun for 4 to 5 days to obtain a humidity level of around 16%.

The clove tree can reach 15 meters high and you often have to wait 20 years for its yield to be optimal.

Clove finds its place perfectly in cooking and accompanies the composition of many sweet or savory dishes (broths, soups, stews, in marinades, and dishes with sauces), provided however that it is used sparingly, both its taste is pronounced.

Kind advice, even if freedom is required, always remember that you only need to put 2/3 of it in your dishes for it to enhance them expertly.
