White pepper comes from red pepper picked when fully ripe. Once harvested, it is immersed in boiling water for 5 minutes, then soaked in pure, cold water for a maximum of 48 hours.

It is then removed from its pericarp (envelope), then dried in the sun.

White Kampot pepper reveals milder, slightly minty flavors and is perfect for fish and white meats.
